January Recipe 2: Cornbread & Beef Skillet Pie

This recipe is courtesy of The Woman's Day Everyday Cookbook.
 
Ingredients:
1 lb lean ground beef
1 can ranchero beans
1 can whole kernel corn
1 package cornbread mix
1/2 cup shredded pepperjack cheese

1.  Heat oven to 400 degrees
2.  Brown ground beef in a large skillet with heatproof handle over medium-high heat.  Stir in ranchero beans and drained whole-kernel corn.  Simmer 2 minutes.
3.  Meanwhile, prepare cornbread mix as package directs.
4.  Spoon cornbread mixture on top of beef mixture in skillet  Sprinkle with shredded pepperjack cheese.
5.  Bake 15 minutes or until a wooden pick insert in center of cornbread comes out clean.  Cool 5 minutes.


I substituted black turtle beans for ranchero beans simply because I have had a bag of black turtle beans in the cupboard for ages and no idea what to do with them.  I soaked the beans all day while at work, then simmered them on the stove for an hour before adding them to the skillet mixture for dinner.







Very easy, pretty tasty.  Yum!
